Shirley Bullock’s Recipe for Curry Chicken

Philip Dixon has for a long time bragged that his Vincentian-born mother-in-law makes the best Chicken Curry he’s ever eaten, so during a recent visit with his wife Sue, he managed to coax the recipe out of Shirley specifically for inclusion in this book.

This curry makes an excellent filling for roti wraps or may be served with rice.

Philip says: It was like pulling teeth but we got there in the end. It was really difficult for Shirley to explain how she prepares this, a bit like driving - you just do it and don’t think about it!!

(I think Shirley almost fainted when I suggested to Philip we record a video of her explaining the recipe for my readers. I’m afraid that written, and without exact measurements, is all you’re ever going to get for this particular recipe.)

Chop up a chicken, then season it up with some garlic, some chopped onion, a bit of black pepper, some curry powder and a little hot pepper sauce. Leave it to stew in the fridge. Next day when it’s ready to cook put some oil in a pan and simmer chicken for a few minutes. Add fresh curry powder, a bit of black pepper, some coriander and thyme, more chilli powder, a bit of turmeric and a few mixed herbs. Add some water, add tomatoes and onions and add a bit of tomato puree. Cook a bit and add some English potatoes. Leave to stew and when it’s ready add some salt. Add more hot pepper if you like.
